Crepes




My dad was known for making crepe's on the weekends, and as kids we always looked forward to it. Who doesn't love carbs stuffed with fruit and smothered in sugar? Crepes are so versatile because you can stuff them with almost anything sweet or savory. We would usually fill them with canned peaches or mixed fruit topped with a dusting of powdered sugar and whipped cream. Those nostalgic memories are some that I like to recreate for my own children.


They are so easy to make, I do it in just a few minutes in my bullet blender. This recipe is interchangeable if you use oat milk or almond flour, just tweak it as you see fit!


Ingredients:

1 1/2 cups of flour

1/2 tsp salt

2 tsp olive oil

2 cups of milk

1 tsp vanilla

1 TBSP sugar


As I said I use the bullet mixer and I always add my flour, salt, oil, vanilla and sugar first. I follow it with the 2 cups of milk and viola after a few pulses on the bullet you get a great crepe batter. I make it the night before so it can rest in the refrigerator and be ready to preform first thing in the morning!
