Tomatoes, Tomatoes, Tomatoes!
This summer God has provided our family with an abundance vegtables and mostly tomatoes! It has been such a blessing! However even after giving a bunch away we still can't consume all the produce we have gathered. Since I don't have the time to can sauce or salsa to store for the future I went to the next best option, to freeze!
Before I can freeze the tomatoes, I have to take all the peels off. In order to do that effectively, I bring a large pot of water to boil. I score the bottom of every tomato by cutting 2 crossing slits in the shape of an X. Then I drop them in the water for a few minutes. You will see the skin begin to curl up, then I collect them in a container. I continue this process in batches until all the tomatoes are finished. Then I sit down and peel off the skin on each tomato. When each one if finished I bag them, label them and off to the freezer! Next time I have sauce to make these garden tomatoes will be the star of the show!
